Chickpea, Pancetta & Tomato Soup

Heat the olive oil in a large saucepan over medium heat

Add the pancetta and cook until crispy

Add the onions and cool until they become slightly brown

Stir in the sage and garlic until aromatic

Add the tomatoes, chickpeas and stock.

Season with salt and pepper to taste

Bring to boil, reduce heat to medium for 10 minutes

Stir in the cavolo nero, (Tuscan kale) and cook for an additional 3 minutes

Serve with extra virgin olive oil and grated parmesan cheese

3 Tablespoons Olive Oil

100 grams /3 ½ ounces pancetta or un-smoked bacon finely chopped

2 onions diced

5 sage leaves

3 garlic cloves crushed

1 400 gram/14 ounce can of chopped tomatoes

250 grams/9 ounces of cooked chickpeas or 1 14 ounce can

850 ml/3 ½ cups of vegetable or chicken stock

Salt and pepper to taste

200 grams/7 ounces cavolo nero (Tuscan kale), finely chopped

Extra virgin olive oil and Parmesan cheese to serve
