1. Place quinoa in a medium saucepan with water. Bring to a boil over high heat. Cover pan, reduce heat and allow to simmer until all water is absorbed and quinoa is tender, approximately 15 minutes.

2. Mix in apple juice, raisins lemon juice, cinnamon and salt. Cover pan and allow to simmer for an additional 15 minutes. Stir in vanilla extract

3. Serve warm. Add toppings if desired

1 cup uncooked quinoa

2 cups water

2 cups apple juice

1 cup raisins

2 tbsp lemon juice

2 tsp vanilla extract

Salt to taste

 

Optional toppings:

Bananas

Berries

Apple Slices

Maple Syrup
