In a bowl whisk all ingredients together. Set aside

1. Blend beans, beets and kale together in a large bowl

2. Pour dressing over salad

3. With a large spoon make sure dressing is blended through salad

4. Transfer to a serving bowl and top with feta cheese

Serve

This recipe can be made a day in advance.

2 cups cooked white
kidney beans

2 cups cooked and diced red beets

2 cups chopped kale

½ cup crumbled feta cheese

 

Dressing

 

½ cup olive oil

¼ cup cider vinegar

1 teaspoon sugar

1 teaspoon Dijon mustard

Salt and Pepper to taste
