Quinoa with Black Beans

1. Heat oil in a saucepan over medium heat

2. Add onion and garlic, cook until lightly browned, about 10 minutes

3. Mix quinoa into onion mixture and cover with broth or water

4. Add, cumin, cayenne pepper, salt and pepper

5. Bring the mixture to a boil, Cover, reduce heat and simmer until Quinoa is tender and broth is absorbed. This should take approximately 20 minutes

6. Stir in frozen corn until heated through

7. Mix in black beans and cilantro

Serve and enjoy

1 tbsp. vegetable oil

1 onion chopped

3 cloves garlic chopped

3/4 cup quinoa

1½ cups broth or water

1 tsp. ground cumin

1/4 tsp. cayenne pepper

1 cup frozen corn kernels

1 (15 oz.) can black beans,

rinsed and drained

1/2 cup chopped fresh cilantro

salt and pepper to taste

 

Preparation Time: 15 Minutes

Cooking Time: 35 minutes
