Heat the oil in a large frying pan cooking the onions until soft and golden.
Add the garlic and cook for an additional minute.
Mix the beans in and cook until oil is absorbed in beans
Place the ingredients in a food processor, adding ½ of the lemon, ½ of the mint leaves extra virgin olive oil, salt and pepper
Blend the ingredients to a textured dip.
Do not over blend.
Garnish with mint and lemon
Serve with vegetables, crackers and pita
400 grams/14 ounces cooked fava beans
2 Tablespoons Olive Oil
1 onion finely diced
3 garlic cloves crushed
1 spring fresh mint
Juice of 1 lemon
3-4 Tablespoons extra virgin olive oil
Salt and Pepper to taste
