1. Bring 2 cups of water to a boil in a small pot

2. Add a pinch of salt

3. Add couscous. Stir and bring back to a boil. Remove from heat and let stand for 5 minutes with lid on pot

4. Toast walnut pieces for 10 minutes in

a 350º F oven

5. Zest Lemon

6. Cut lemon in half and extract lemon juice for dressing

7. In a bowl, blend walnuts, cranberries and lemon zest with couscous

8. Add oil, and lemon juice

9. Salt and pepper to taste

1 1/3 cups whole wheat couscous

1/2 cup toasted chopped California walnuts

1/2 cup dried cranberries

1 lemon - zest and juice

1/2 cup olive oil

salt & pepper to taste
