1. Bring 2 ½ cups of salted water to a boil

 

2. Add farro and reduce to low heat simmer, cooking until water is absorbed (about 25 minutes)

 

3. In a large pan, add olive oil and heat on high. Add Brussels sprouts and cook until soft, (about 3 minutes)

 

4. Add riced cauliflower and cook until soft,

(about 3 minutes)

 

5. Add cooked farro blending all ingredients thoroughly

 

6. Salt and Pepper to taste

 

When adding ground beef:

In a separate pan sauté onion with oil and garlic. Add beef separating pieces with a spoon. Cook until pink disappears in the center

Blend cooked meat with other ingredients.

1 cup farro

2 cups Brussels sprouts, shaved

1 cup riced cauliflower

(use box grater or food processor with grater blade to chop cauliflower into rice-sized pieces)

1 ½ tbsp olive oil

1/2 lb lean ground beef (optional)

Salt and Pepper to taste

1/3 tsp salt

 

Additional ingredients if adding ground beef to recipe:

 

½ lb ground beef

1 tbsp olive oil

½ onion chopped finely

1 tsp chopped garlic
