1 In a large pot put the beans, smoked paprika and 1 teaspoon of salt covered with 2 inches of water. Bring to boil, cover the pot and let the beans cook for 45 minutes or until soft. Drain and save reserve liquid

2 In the pot heat the oil adding, onions, carrots, potatoes and leek. Stir until tender, (approximately 15 minutes)

3 Add the garlic, thyme, bay leave and 1 teaspoon salt. Cook for additional 5 minutes making sure all seasonings are fully blended into vegetable mixture

4 Add stock and reserve water from beans (total 10 cups)

5 Bring to boil

6 Add zucchini and canned tomatoes, green beans, cooked beans, spinach and pasta

7 Cook for an additional 5 minutes

8 Remove bay leaf

9 Serve with parmesan cheese

I cup dried beans, (cranberry, cannellini
or red kidney)

½ cup olive oil

5 sprigs of fresh thyme

1 bay leaf

2 teaspoons smoked paprika

2 teaspoons salt

4 large garlic cloves chopped

or 2 teaspoons crushed garlic

1 large onion finely chopped

2 medium carrots

finely chopped

10 cups of water or choice

of chicken or vegetable stock

1 leek finely chopped

2 cups of green beans diced

2 medium zucchini diced

1 potato diced in small pieces (bite size)

1 14.5 ounce can of chopped tomatoes

2 cups fresh spinach leaves

stemmed and chopped

2 cups cooked pasta (shell,

bowtie, spiral)

 

Parmesan cheese for garnish
