1. Bring the barley and water to a boil in a saucepan over high heat.

2. Cover, reduce heat to low and simmer until the barley is tender, about 30 minutes

3. Remove from heat, rinse and drain. Chill in refrigerator

4. In a large salad bowl combine the cooked barley, tomato, beans, corn chipotle pepper, 1 tablespoon canola oil, salt, black pepper, and cumin. Blend thoroughly

5. In a separate bowl whisk together the water, corn syrup, 1 tablespoon canola oil, lime juice, lemon juice, cilantro, white vinegar, onion powder.

6. Pour dressing over barley mixture and toss to combine

7. Gently mix in chopped avocado

8. Refrigerate until cold

1 cup barley

2 cups water

¾ cup canned black beans rinsed and drained

¾ cup canned whole kernel corn rinsed and drained

1 avocado peeled, pitted and chopped (do this last minute to maintain color)

1 medium tomato cored and chopped

¾ chipotle pepper in adobo sauce finely chopped

2 tsp. canola oil

½ tsp salt

½ tsp ground black pepper

½ tsp ground cumin

¼ cup water

2 tbsp. light corn syrup

1 tbsp. lime juice

1 tbsp. lemon juice

¼ cup chopped fresh cilantro

1 tsp. white vinegar

¼ tsp. onion powder
