Place the chickpeas in a food processor with the lemon juice ,garlic, tahini, and 2 tablespoons of water (Holding back a few of the peas for garnish)

Blend until the mixture is smooth adding more water if necessary.

Add paprika, salt and pepper to taste

Serve in bowl, garnish with parsley and remaining chickpeas

Serve with vegetables and toasted pita or crackers

Serves 4 as a starter, 8 as a dip

Ingredients

300 grams/10 ½ ounce of cooked chickpeas (garbanzo beans)

(or 1 14 ounce can)

Juice of 2 lemons

2 Garlic cloves crushed

4-6 Tablespoons tahini

2 Tablespoons extra virgin olive oil

1 teaspoon Paprika

Salt, Pepper or Cayenne Pepper to taste

1 Tablespoon finely chopped parsley
