Heat the oil in a pan and cook the onion until soft and golden.
Add the garlic and cumin for an additional minute until fragrant
Put the onion mixture into a food processor with the beans and ½ the chipotles.
Blend to a puree and then add remaining chilis, sour cream, lime juice.
9 ounces cooked black beans or 1 14 ounce can
2 Tablespoons Olive Oil
1 Onion finely diced
3 garlic cloves finely diced
1 teaspoon ground cumin
2 chipotle chilis in adobo sauce (stalks removed)
2 Tablespoons sour cream
Juice of 1-2 limes
Salt to taste
1 Tablespoon fresh cilantro
Tabasco Sauce (optional)
