1. Pre-heat oven to 375 degrees

2. For the dressing, place the grapefruit zest in a small bowl. Add the vinegar and olive oil. Set aside

3. Place the quinoa in a sauce pan over medium heat; shaking the pan constantly to toast the grains. (Approximately 4 minutes)

4. Immediately add 2 ¼ cups water and ¾ teaspoon salt. Increase the heat to high and bring to a boil. Reduce the heat to medium low and simmer until all moisture is absorbed and grains area cooked. (Approximately 10-12 minutes) Stir the grains in the pan occasionally to avoid grains sticking to pan.

5. Remove grains from pan and spread on a cookie sheet to cool

6. Place the walnuts on a baking sheet and toast for 5-7 minutes

7. In a large bowl blend all ingredients together.

8. Toss dressing in salad and serve

Dressing

½ tsp finely grated grapefruit zest

2 tbsp white wine vinegar

3 tbsp extra virgin olive oil

2 tbsp of juice from grapefruit

 

Salad

1 ½ cups quinoa

1 cup walnut halves and pieces

2 grapefruits cut in bite sized chunks eliminating skins and white pith

½ cup pitted dates sliced

3 tbsp chopped fresh flat parsley
