1 In a large pot heat the oil.

2 Add the onion and the garlic. Sautee until the onions are soft and translucent (5-7 minutes)

3 In the pot add the pepper, cumin, coriander, to the pan pot. Continue to cook for 2 additional minutes

4 Add the lentils, lemon juice, zest and stock.

5 Cook for additional 45 minutes

Salt and pepper to taste

2 cups /1 lb Autumn Harvest

Lentil Blend

1 large onion finely chopped

2 stalks celery finely chopped

2 carrots finely chopped

2 cloves garlic chopped or

1 teaspoon crushed garlic

½ cup diced canned tomatoes

1 lemon (juice and zest)

½ teaspoon ground coriander

½ teaspoon ground cumin

½ teaspoon crushed

peppercorns

2 tablespoons olive oil

8 cups of chicken stock or water

 

Parmesan cheese for garnish
